We use the USDA National Nutrient Database for Standard Reference to calculate our nutrition. This is provided by the U.S. Department of Agriculture, Agricultural Research Service, 2009. USDA National Nutrient Database for Standard Reference, Release 22.
In some cases we may use technology to approximate nutrition. For example, if we know the nutritional content of chicken leg, we may use that to help us calculate the nutritional content of a chicken thigh.
